Spinach and Artichoke Pasta

Arugula Salad

  • cherry tomatoes cut in half
  • balsamic vinaigrette dressing
  • baby arugula
  • mozzarella pearls
Marinade the tomatoes in balsamic dressing for a few hours or while you are preparing your meal.  When you are ready to eat; toss arugula with marinaded tomatoes and mozzarella in a large bowl. Use a little of the dressing from the marinade to dress the salad.
