Three Herb Pasta Sauce & Mini Turkey Meatballs

Three Herb Pasta Sauce

3-4 garlic cloves, minced

¼ cup extra virgin olive oil

1 28oz can Hunt’s crushed tomatoes (low sodium)

1 14.5oz can Hunt’s diced tomatoes (low sodium)

fresh basil, rosemary, cilantro (chopped)

sea salt (to taste)

Heat a large flat pan with high sides to medium heat (do not use a sauté pan); add EVOO and garlic and let the garlic simmer in the EVOO until it starts to brown; add both cans of tomatoes; stir and fold sauce often; add fresh herbs, seasonings, and salt to taste; reduce heat if sauce splatters out of pan; allow sauce to simmer on low for 20-30 minutes or until hot and flavourful; for a more liquidy sauce, cover pan; for a chunkier sauce, leave pan uncovered; begin to cook pasta about half way through cooking the sauce.


Mini Turkey Meatballs


1/4 cup onion (grated)
3 garlic cloves (minced)
1 egg
¼ bread crumbs
3 tbs ketchup
¼ parsley (chopped)
parmesan cheese (grated)
oregano (to taste)
1 lbs Jennie-O dark ground turkey meat


Add above ingredients in order written; mix together well with hands; form mixture into smallish meatballs; heat pan to low/med heat and add olive oil; add meatballs to pan; cook on each side for 2 mins; cook a total of 5 mins or until browned.
